RECIPE ADVENTURES | barbecue ranch ‘chicken’ pizza

Crazy busy over here. Managed to make a ‘chicken’ barbecue ranch pizza last night for Marc and I. Yum! leftovers for lunch. Even though things have been crazy hectic, I can still take 10 minutes to make dough, let it rise, and make a homemade pizza for a wonderful dinner in not much time.

Dough: Mix 2 tsp of active dry yeast with 1 cup of luke warm water. Whisk. Add 2 tsp salt, some ranch seasoning, a little garlic powder, and 2 cups of flour (almost any will do, I used all-purpose). Knead together, and add 1/2 cup of flour until it is not so sticky. When in a ball, keep kneading until you think it’s right. This is not a science, or at least not to me at this point. Place in bowl, and pour olive oil (about 2 tbs) over, and then grab the dough and roll it around so the oil is over the whole bowl. Over this bowl with cling wrap and set in a warm area (I just set it by the window in my kitchen) for 2 hours (1 if you’re in a hurry).

Pizza: When this dough is done, get some parchment paper and spray with any non-stick oil spray. Roll out your dough with your hand into whatever pizza shape you’d like. Place in oven at 400 for 10 minutes.

Mix ranch and barbecue sauce of your choice together for sauce, microwave veggie chicken with a bit of barbecue sauce, and chop up some onions. Place sauce and toppings on pizza, and top with cheese. Return to the oven for 5-10 minutes.

Take out and enjoy!
